Turkish Simit

Turkish Simit, often referred to as a “sesame bagel,” is a beloved culinary icon in Turkey. This circular bread ring is famous for its chewy texture, crisp crust, and generous coating of sesame seeds. Whether enjoyed as a quick snack on the bustling streets of Istanbul or as a delightful addition to a traditional Turkish breakfast spread, Simit offers a delightful fusion of flavors and textures. Ingredients:

For the Dough:

4 cups all-purpose flour

2 tsp active dry yeast

1 tsp sugar

1 ½ cups lukewarm water

1 tsp salt

For the Topping:

1 cup sesame seeds

½ cup molasses (pekmez)

½ cup water

Instructions:

1. Prepare the Dough:

In a small bowl, combine the lukewarm water, sugar, and yeast. Let it sit for about 10 minutes or until it becomes frothy.

In a large mixing bowl, sift the flour and add the salt.

Pour the yeast mixture into the flour and mix well until it forms a dough.

Knead the dough for about 10-15 minutes until it becomes smooth and elastic.

Cover the dough with a clean kitchen towel and let it rest in a warm place for about 1 hour or until it doubles in size.

2. Shape the Simit:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Divide the dough into equal-sized pieces and roll each piece into a rope about 24 inches (60 cm) long.

Join the ends of each rope to form a circle, gently pressing the ends together to seal.

3. Prepare the Topping:

In a shallow bowl, mix the molasses and water.

Place the sesame seeds in another shallow bowl.

4. Coat the Simit:

Dip each prepared simit into the molasses mixture, making sure it’s well coated.

Then, roll it in the sesame seeds, ensuring they stick to the surface of the simit.

5. Bake the Simit:

Place the sesame-coated simit rings on the prepared baking sheet.

Bake in the preheated oven for about 20-25 minutes or until they turn golden brown and sound hollow when tapped on the bottom.

6. Serve:

Allow the simit to cool slightly before serving. They are best enjoyed fresh and can be served with cheese, olives, tomatoes, and tea for a classic Turkish breakfast or snack.
