Kisir

Ingredients for Kısır:

  • 1 cup bulgur
  • 1 tablespoon tomato paste
  • 1 onion, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Lettuce leaves or fresh herbs, for garnish (optional)
  1. Put the bulgur in a bowl and add enough cold water to cover it. Allow the bulgur to soak for 10 minutes, then drain off the excess water.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. Add the tomato paste, oregano, cumin, salt and pepper to the skillet and mix well.
  4. Add the drained bulgur to the skillet and stir until it is well coated with the tomato paste mixture.
  5. Cover the skillet and cook for 10 minutes, stirring occasionally.
  6. Remove the skillet from the heat and let the Kısır cool for 10 minutes before serving.
