Ingredients for Kısır:
- 1 cup bulgur
- 1 tablespoon tomato paste
- 1 onion, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Lettuce leaves or fresh herbs, for garnish (optional)
- Put the bulgur in a bowl and add enough cold water to cover it. Allow the bulgur to soak for 10 minutes, then drain off the excess water.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the tomato paste, oregano, cumin, salt and pepper to the skillet and mix well.
- Add the drained bulgur to the skillet and stir until it is well coated with the tomato paste mixture.
- Cover the skillet and cook for 10 minutes, stirring occasionally.
- Remove the skillet from the heat and let the Kısır cool for 10 minutes before serving.
